A Taste of the Tropics: Key Lime Pie Done Right

There’s something magical about the combination of tart key lime juice, silky sweetened condensed milk, and a buttery graham cracker crust that transports me straight back to my fav beach hiding spots. This Key Lime Pie is so simple it will leave you questioning why you didn’t make it at home sooner.

Ingredients:

  • 1 sleeve graham crackers
  • 1/4c coconut
  • 1 teaspoon cinnamon
  • 8 tablespoons melted butter
  • 1 can sweet condensed milk
  • 1/2c key lime juice
  • 1 tablespoon key lime zest
  • 3 egg yolks

Directions:

  1. Prepare the Graham Cracker Crust: Preheat your oven to 325 F.
    • In a medium bowl, combine the graham cracker crumbs, coconut, and melted butter. Mix until the crumbs are evenly moistened.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish, forming an even crust.
    • Bake the crust in the preheated oven for a few minutes, or until lightly golden brown. Remove from the oven and let it cool slightly while you prepare the filling.
  2. Make the Key Lime Filling: In a large mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth and well combined.
    • Gradually add the key lime juice and zest, whisking constantly, until the mixture is thick and creamy.
    • Pour the filling into the pre-baked graham cracker crust, spreading it out evenly with a spatula.
  3. Bake and Chill: Return the pie to the oven and bake for about 15 minutes, or until the filling is set but still slightly jiggly in the center.
    • Remove the pie from the oven and let it cool to room temperature, then transfer it to the refrigerator to chill for at least 2 hours, or until fully set.
  4. Serve and Enjoy: Once chilled, garnish the pie with freshly grated key lime zest for a pop of color and extra zing.
    • Slice the Key Lime Pie into wedges and serve.
