In our house, it’s a favorite, especially for my daughter, who can hardly wait for it to come out of the oven before she’s asking for a slice. And who could blame her? Ingredients:
- 1 stick softened butter
- 2 eggs
- 2 teaspoons vanilla extract
- ¾ cup packed brown sugar
- 1¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 3-4 ripe bananas
Directions:
- Preheat Oven and Prepare Pan: Preheat your oven to 350 F. Grease a 9×5-inch loaf pan or an 8×8 baking dish
- Mash the Bananas: In a medium bowl, mash the ripe bananas (I like them chunky). Set aside.
- Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and packed brown sugar until light and fluffy. This should take about a couple minutes
- Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next. Mix in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter and sugar mixture, mixing just until combined. Be careful not to overmix.
- Add Bananas: Fold in the mashed bananas until evenly distributed throughout the batter.
- Pour into Pan: Pour the batter into greased baking dish.
