Sourdough Dinner Rolls

These sourdough dinner rolls have become a staple, often making an appearance at least once, sometimes twice a week. They are not only delicious on their own but also make the perfect base for one of my favorite Turkey Grinders. Here’s a beginner-friendly recipe that you and your family will love.

Ingredients:

  • 1/2 cup active sourdough starter
  • 3/4 cup warm water
  • 1/4 cup sugar
  • 3 tablespoons cold butter, cubed
  • 1 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • Egg wash (optional)

Directions:

1. Prepare Your Starter:

  • 6-8 hours before baking, feed your starter to ensure it is active and bubbly.

2. Mix the Dough:

  • In a large bowl, combine the active sourdough starter and warm water
  • Gradually add the flour to the mixture, stirring until it forms a dough. It might be a bit sticky, but that’s okay!
  • Let rest for 30 mins

3. Rest and Rise

  • Preform first round of stretch and folds
  • Let rest for 30 mins
  • Repeat stretch and folds 2-3 more times

4. Chill:

  • Place dough in lightly oiled bowl in the fridge over-night

5. Shape the Rolls:

  • After taking the dough out of the fridge, cut into equal divide the dough into 8 equal portions. Shape each portion into a smooth ball.

6. Second Rise:

  • Place the shaped rolls on a greased 8×8 or a pie pan works fine as well.
  • Cover them with a clean kitchen towel and let them rise for another 1-2 hours until they double in size again.

7. Preheat the Oven:

  • About 30 minutes before the rolls are done rising, preheat your oven to 375 F

8. Egg Wash (Optional):

  • If you want a shiny finish, lightly beat an egg with a tablespoon of water. Brush this mixture over the risen rolls just before baking.

9. Bake:

  • Bake the rolls for 15-20 minutes, or until they’re golden brown on top.

10. Enjoy:

  • Remove the rolls from the oven and let them cool slightly before placing them on a baking rack to cool.

Tips for Success:

  • Active Starter: Make sure your starter is active and bubbly before you begin to ensure the best rise and flavor.
  • Temperature: Dough rises best in a warm environment.
  • Flour Variations: Feel free to experiment with different flours for added flavor and texture.
